Sourced from two low yielding vineyards, one in the in the Tallarook Ranges and one from the high-altitude Alpine Valleys, the fruit is handpicked and then destemmed, crushed and gently pressed ensuring only the freerun and first cut pressings are added to the blend. It’s inoculated and barrel fermented in a combination of new and old larger format French oak barrels. Once through ferment we allow to sit on lees to enhance texture and complexity of the wine. We then age for 10 months in oak before racking and bottling. Balanced and elegant this Chardonnay has infinite aromatics of white peach, grapefruit and stone fruit with subtle nuttiness from the oak. It’s pretty, delicate and approachable, with refreshing, crisp acidity, soft creamy texture and delicious fruit flavour lingering to the finish.
